Days after Book Bindery reopened as Hommage, Shaun McCrain announced details on his first solo restaurant, Copine. The lauded chef revealed plans to depart from Book Bindery last spring with partner Jill Kinney to start a new venture but has been tight-lipped about the project until today. Described in a press release as “refined cuisine as well as a higher-end daytime take away concept” the restaurant’s name is a French word that roughly translates to “girlfriend or comrade.”
The Olson Kundig-designed space will seat 60 and include a chef’s table and full bar with a drink program headed up by former Book Bindery beverage director Ruven Muñoz. The owners will host a series of pre-opening “supper clubs” to test out recipes at Mallet kitchen studio in SoDo in conjunction with Seattle Mag food and drink editor Julien Perry’s One Night Only Project.
