There’s a new name stepping into the kitchen at Majordomo, David Chang’s forthcoming Chinatown restaurant: Jude Parra-Sickels. He’s in as executive chef, which means he’ll oversee the day-to-day operations while shaping and executing the restaurant’s vision alongside Chang. Parra-Sickels was in the Momofuku restaurant stream in New York City a decade ago, before relocating to Los Angeles to work with Roy Choi at POT at the Line Hotel. Most recently he was the executive chef at The Cannibal in Culver City.
On the other side of things, Christine Larroucau is in as general manager for Majordomo. She’s been in and out of the Mozza world for years, most recently as the general manager of Pizzeria Mozza.
