Born and raised in the vibrant port of Callao, Lima, Carlos discovered his lifelong passion for cooking at the tender age of four, under the loving guidance of his grandmother. In his family, the art of indulging in and celebrating food held a special place, and it’s a tradition he’s eager to pass on to his daughter, Sophia.
Carlos’s culinary journey began in the heart of his hometown, where he honed his skills working in Chifa and Cebiche restaurants. In those days, recognized dining establishments were scarce, but the culinary landscape has since undergone a remarkable transformation. When Carlos immigrated to a new country at the age of twelve, his culinary calling became clear, and by the age of sixteen, he embarked on a full-time career as a chef.
Food became not just a profession but a path to self-discovery for Carlos, deeply influenced by the rich tapestry of Peruvian culture. This cultural connection shapes his style and the person he has become today.
Today, Chef Carlos Delgado curates a Peruvian tasting odyssey known as “Causa.” With expertise and flair, he leads guests on a culinary exploration of Peru’s diverse landscapes, from the breathtaking coastline to the majestic Andes mountains. Through a meticulously crafted menu, the journey unfolds, revealing the myriad flavors and textures that define Peru’s traditional and modern cuisine.
