Born in Milwaukee and raised in Corpus Christi, TX, Brian is a self-taught culinarian that is inspired by the smells, tastes and experiences of meals past. A journey that started at 15 as the cashier & dishwasher for a local fast food joint, Pete’s Chicken n’More, has turned into a passionate culinary career. At 23, Brian moved to Los Angeles where he joined Jon Shook and Vinny Dotolo’s full service catering company, Caramelized Productions. He then went on to join the opening team of Jon & Vinny’s Italian (‘15) and then made the move over to animal (’16) and would become their Kitchen Tournant. Brian joined the Crafted Hospitality family, in Jan ’19, as Craft Los Angeles’s Executive Sous but quickly found himself called up. Today, Craft LA is proud to call Brian our Chef de Cuisine, a well-earned distinction & position that he is the youngest & first African American chef to hold. When not with his Craft LA family, Brian is searching the city for the best burger or foraging at the local farmer’s market to find out what his local land has to offer.
