An Innovative Local Partnership

Bazaar Meat and Bar Mar are a joint venture between José Andrés Group and Gibsons Restaurant Group (GRG), which has shaped the Chicago dining scene for over 30 years. GRG began with the founding of the iconic Gibsons Bar & Steakhouse by Steve Lombardo and Hugo Ralli and is now the expert operator of some of the country’s highest-grossing restaurants, always with an unwavering dedication to hospitality, quality, and value. This project represents an unprecedented pairing, bringing together the Lombardo family’s operational expertise and Chef José Andrés’ Michelin-starred culinary ingenuity.

José Andrés Group is raising a community round of funding to bolster two existing concepts in its portfolio, Bazaar Meat and Bar Mar. The restaurants occupy three floors in Chicago’s Bank of America Tower, a 1.5 million square-foot, Class A commercial development; other tenants include Bank of America, Lincoln International, Perkins Coie, and Jones Day. Steve Lombardo

A savvy entrepreneur with an unyielding sense of community, Steve Lombardo has founded and operated restaurants since 1969. In 1989 Steve and his partner Hugo Ralli, opened Gibsons Bar & Steakhouse, now a Chicago institution, and have continued to help shape the city's dining landscape. Today GRG operates iconic hospitality concepts including Gibsons Bar & Steakhouse, Hugo's Frog Bar & Fish House, LUXBAR, and Quartino Ristorante & Wine Bar.

Stephen K. Judge

Stephen joined GRG as COO in 2021. He oversees the operations of award-winning concepts including Gibsons Bar & Steakhouse, Quartino Ristorante & Wine Bar, Gibsons Italia, and The Boathouse. Most recently, Stephen served as president of Café Operations for Hard Rock International. Prior, he was the CEO of Romacorp, president of Bonefish Grill, and president of Season 52; he held executive leadership roles at MGM Grand Hotel & Casino in Las Vegas and led operations at Rosewood Hotels & Resorts.

Steve Lombardo, III

Steve joined the family business in 2014 as part of the next generation of leadership. Prior to joining Gibsons Restaurant Group, Steve was a mergers & acquisitions partner at Katten Law Firm where he advised several restaurant companies, including GRG, Stir Crazy, Meatheads, Rice Garden, Five Napkin Burger, and Third Coast Hospitality.

Luke Gardiner

A systems-oriented person, Luke takes pride in running the restaurants harmoniously and providing warm, elegant service. Previously, he spent six years with Starr Restaurant Group (“the best restaurant management school”), during which time he opened the Michelin-starred restaurant Clocktower.

Use of Proceeds

Bazaar Chicago seeks an additional $2M in exchange for a 3.85% membership in GRG TFG Wacker LLC. Proceeds from the investment will be used for capital expenditures to enhance and expand the kitchen equipment and the furniture and furnishings.
