  • Decision on the right space

    Hello fellow craziesI’m in the midst of opening my first restaurant and before you ask, yes I have experience in this industry, plenty of it.Obviously finding the right location is an incredibly important decision, and I wanted to pick your brains regarding the size of a location more so than where it actually is.To give some details, I’d initially based my projections on 45 covers, with a modest seat turnover. I currently have a possible opportunity to work with a space in a great location but I’m unlikely to fit in more than 30 covers. Part of the allure of my concept however is that I will have a counter dining design where about 15 or so covers will face the kitchen, creating an intimate and personal dining experience for customers.I know some of the more obvious disadvantages and advantages, but I was curious to hear from others who had ended up working with a smaller space than they’d initially projected and how that had turned out.Happy to answer questions and give a bit more details if you guys and gals are curious. Thanks for your advice!
