Endocarp Consulting is a consulting company under Austin Publicover.
Austin Publicover is Certified in Comprehensive Food Safety (CCFS) as well as a Certified Professional in Food Safety (CP-FS), an International HACCP Alliance lead instructor, a Seafood HACCP lead instructor, a Preventive Controls Qualified Individual (PCQI) and a PCQI Lead Instructor. He has earned several HACCP certificates, including juice HACCP (Cornell University), seafood HACCP (University of Connecticut), Foreign Supplier Verification Program certification (FSPCA), and general HACCP (Texas A&M via IHA). Austin is an associate member of the Central Atlantic States Association of Food & Drug Officials and member of the International Association for Food Protection.
2008 – 2014: Austin worked as an operations manager in the corporate structure of Danny Meyer’s Union Square Hospitality Group. 2013 to 2020: Austin ran Bulletproof! Food Safety: 614 repeat clients, >950 restaurant kitchens inspected, >1,500 foodworkers trained. At Bulletproof, Austin also handled HACCP for breaded poultry, gelati, confections, smoked salmon, tortillas, fermented hot sauce, hot-filled salsa, ROP retail, imported bottled water, HPP’d pesto sauce, and lots of fruit and vegetable juices. 2020 onward: Austin formed Endocarp to address larger needs in artisan manufacturing and consumer packaged goods.

Austin takes pride in assisting plant-based product companies achieve regulatory & food safety in view of evolving state & federal regulations, including FSMA*.
Austin’s experience inspecting more than 950 kitchens & production facilities also qualifies him across a wide variety of food production scenarios. In addition to the above food safety plans, programs, and restaurant services, Endocarp Consulting is qualified to develop HACCP plans for special processes, including:

For special processes that require only a HACCP plan, Endocarp Consulting will prepare and submit your HACCP plan to the regulatory authority, follow through with revisions, and obtain approval and a variance.
*Although Austin has experience with USDA, he does not currently work with meat or meat-based products.
